Mashed potatoes

Who doesn't love mashed potatoes? They're probably my favorite food. Today, in preparation for a family Easter dinner, I made a shepherd's pie (with chicken instead of lamb or beef.) I mix sauteed vegetables with the chicken, toss them in a sauce and then top everything with a thick layer of mashed potatoes. I don't need a recipe because I've done it so many times, and I

ad lib depending on what's in the fridge. Today I added broccoli. Uh-oh. I hope my guests like broccoli. 

 

 

Why two pans? One if for my sweet next door neighbor, Cory, who mows our lawn and generally takes care of us old folks.

 

And yes, those are filled plastic Easter eggs and two baskets for the grandchildren to find in our back yard tomorrow. 

 

This time, instead of using butter and milk when I mashed the potatoes, I put in olive oil and unsweetened soy milk because I've been following a plant based diet for the last 5 months. I don't think my guests will notice the difference, and at least I get to eat the potatoes if not the whole pie. 

 

My husband, Alan, helped me especially with the dish washing, and here he is making his job a little easier by eating the remains of mashed potato out of the bowl because it's so delicious:

 

I ate a bowl of mashed potatoes, too. Does it count as creative if I add chopped olives and peppers? Maybe, but I am eating out of a ceramic bowl I made.
